Fall is one of my favorite seasons for so many reasons! The air is crisp, and so are the autumn leaves. Suddenly, I want to go on long walks to enjoy the beautiful scenery. There seems to be a perpetual spicy fragrance in the atmosphere, and that makes me want to come right back into the kitchen and bake up a storm! Now, I’m no expert baker, but with such an easy to follow recipe, anyone can fake the bake!
HOW CAN YOU MAKE BAKING EASY?
This recipe is made super simple by starting with a boxed cake mix. Why not? This is a busy time of year. Kids are back in school and fall sports are in full swing. A quick recipe can get me to the field with a tray of warm Pumpkin Spice Cupcakes in tow, before practice is over.

PUMPKIN SPICE CUPCAKES WITH MAPLE CREAM CHEESE FROSTING
- 2 cups powdered sugar
- 4 oz cream cheese, room temperature
- 4 tbsp butter, room temperature
- 2 tbsp maple syrup
- cinnamon (optional)
- In a large bowl combine boxed cake mix, eggs, vegetable oil, and pumpkin.
- With an electric mix beat until well combined for about 2 minutes.
- Fill lined cupcake pan with batter about 3/4 full per cup.
- Bake at 350 for about 18 minutes (or according to box).
- In bowl of your electric mixer, combine powdered sugar, cream cheese, butter, and maple syrup.
- Beat until well combined and powdered sugar in dissolved.
- Fill a piping bag or ziplock bag and pipe onto cupcakes.
- Sprinkle with cinnamon.
