It’s pumpkin everything season, and I couldn’t be happier! I look forward to this time of year all summer long. The kitchen has a perpetual aroma of cinnamon, and clove and other warm spices, because that is what it’s all about in the fall! My husband loves to come up with new recipes and ideas for home cooking, and I must say that this Pumpkin Granola he whipped up is one of his best. It looks, smells and tastes like everything we all love about the season!
The recipe is vegan but don’t let that fool you into thinking that is skimps on taste or texture. It’s delicious and I bet no one could even tell that it lacks dairy.
Because this is a simple and pretty clean recipe, you may have most of the ingredients in your pantry.
It makes for a healthy and sweet addition to the kid’s lunchboxes. My boys love it as an after school, or pre-game snack. If made in a bigger batch, consider it a great option for our football team snacks too. I’m sure parents would appreciate this homemade Pumpkin Granola over anything processed. I have been known to graze on this granola throughout the day. I enjoy a small cup as a snack, grab a handful when I have a sweet craving, and it always somehow ends up as a topping on my ice cream. - 1 29 oz. can Pumpkin Puree
- 10 cups Old Fashioned Oats
- 1 cup Brown Sugar
- 1 tbsp. Pumpkin Spice
- 1 tbsp Pure Vanilla Extract
- 1/4 cup Almond Milk
- Sliced Almonds (Optional)
- Walnuts (Optional)
- Dried Cranberries (Optional)
- Raisins (Optional)
- Roasted Pumpkin Seeds (Optional)
- Shredded Coconut Flakes (Optional)

- Preheat oven to 350°. Combine the pumpkin puree, almond milk, sugar, vanilla, and pumpkin spice in a bowl. Slowly roll the oats in until completely saturated. Spread the mixture onto a large cookie sheet. Bake for 20 minutes, then stir. Repeat 3x, for a total of 60 minutes. Remove from the oven and let cool. Mix in as many of the optional toppings into the granola as desired, enjoy!
