Preheat oven to 350°.
Combine the pumpkin puree, almond milk, sugar, vanilla, and pumpkin spice in a bowl.
Slowly roll the oats in until completely saturated.
Spread the mixture onto a large cookie sheet. Bake for 20 minutes, then stir. Repeat 3x, for a total of 60 minutes.
Remove from the oven and let cool.
Mix in as many of the optional toppings into the granola as desired, enjoy!
